Spinach has more protein than most vegetables
Spinach does not contain more protein than meat, but it is a very good way to add a little extra to your meal. Besides more protein than most vegetables spinach is also loaded with other nutrients. Spinach is rich in vitamins and mineralsm such as vitamin K, vitamin A, vitamin C, folate, iron, potassium and magnesium. The amount of protein in spinach varies depending on what type of spinach you add to your meal. But many kinds have around 3 g of protein per cup. This doesn’t sound like a lot, but since spinach is low of calorie it is a decent amount.

Peas are one of the vegetables with most protein and have almost 8 grams of protein per cup. This is around the same amount of protein as a cup of milk. There are a lot of good ways to use peas. You can either eat them raw as a snack or eat them in or with a bigger meal. Try, for instance, blending them into a nice pesto with fresh mint, toasted pine nuts, olive oil and some parmesan cheese.
Potatoes are a great source of nutrients
A baked potato might have a lot more protein than you realize. They also supply magnesium, potassium, folate, vitamin B-6 and vitamin C. One large baked potato has 8 grams of protein (it does of course vary a bit depending on the kind).
Broccoli is a great source of protein and filled with fiber
Broccoli is a low calorie vegetable packed with vitamin, minerals and fiber. On top of that it even has 5,2 grams of protein per cup.
Brussels Sprouts are nutritional superstars
If there is a vegetable you should learn to love, then it is Brussels Sprouts. They are full of potassium and vitamin K and on top of that there is 4 grams of protein per cup in them!
